Fall Festive Weekend.

Happy Monday everyone! How was your weekend? This weekend for me, was full of adventure. Corn maze with my love and friends, picking out our first pumpkins, watching the GAvsFL game, VICTORY! Making a Pinterest recipe, pumpkin pie spice dip, YUMMM. And last but not least one of my coworkers birthday dinner. After this busy back to the grind Monday, I am finally having the time to post.

And of course I have to add.. Casey sure looks like he had a rough night. Haha.
Pinterest Pumpkin Spice Dip. (YUM!)
 Ingredients:

  • (1) 15oz. Can of pumpkin.
  • (1) 5 oz. Box of INSTANT vanilla pudding. (JUST THE POWDER)
  • (1) 16 oz. Container of cool whip.
  • (1) Small pumpkin.
  • (1/2) Tbsp. Pumpkin pie spice.
  • (1/2) Tbsp. Cinnamon.


Directions:

  1. Mix pumpkin, pudding mix, cool whip, and pumpkin pie spice together (by hand) in a large bowl.
  2. Chill for several hours before serving. Meanwhile, carve the pumpkin.
  3. Sprinkle with cinnamon, and serve with fresh apple slices, vanilla wafers, or ginger snaps.

Pinterest Candied Pumpkin Spice Seeds. ):
Ingredients: 
  • 1 cup of fresh pumpkin seeds.
  • 1/4 cup of packed brown sugar.
  • 1/2 teaspoon pumpkin pie spice.
  • 1/4 teaspoon salt.
Directions:
  1. In a small bowl, combine all ingredients. Spread into a greased foil-lined 15-in x 10-in x 1-in baking pan.
  2. Bake uncovered at 250 degrees for 45-50 minutes or until seeds are well-glazed, stirring occasionally. Cool completely, break into pieces. Store in airtight container.
I am very upset to tell you all, after 48 minutes in the oven, Kyle tried them. Said they were not done. Put them back in the oven for 10 minutes on what he thought the directions said 350 degrees. Lets just say they were black, burning, and smelling the entire house up after only 6 minutes. 

We will definitely be trying again on Wednesday when we carve our big pumpkin.

Friday's Letters. #1



Dear Bloggers and Readers...this is my first post ever. I'm excited, nervous, and ehhk. I don't know. Hope y'all enjoy! 
Dear stupid freshman...fighting in school is not cool nor cute. Especially you girls! Seeing blood before I even get to work is not what I had in mind for 2nd period. 
Dear cute cardigans...I realllly hope the weather stays as shown on my weather app. 72 Saturday and 75 Sunday. I want to wear both of you soo bad!

Dear pumpkins...I can't wait to carve into you with Kyle this weekend. Should be fun! First pumpkin carving EVER! I know. Deprived as a child.
